Job Description
Responsible for overseeing menu planning, food presentation and preparation, the upkeep of the kitchen, managing the staff, inventory and labor budgets.
Work Requirements
- Oversees the daily operations of all banquets including staff while making sure that all food, banquet and otherwise, meet specifications and standards for all functions.
- Support the Galt House hallmarks and standards.
- Responsible for the supervision, training, scheduling staff and handling disciplinary issues.
- Ability to cross function in every position of kitchen.
- Meets with potential clients to discuss menu options.
- Develops menus based on client specifications and contracts.
- Presents finished product to the client for final approval.
- Possess the ability to handle any menu ranging from breakfast buffets to corporate lunch meetings with sandwiches to formal dinners with multi-course meals that are individually plated.
- Helps to maintain a safe and sanitary kitchen by ensuring spills and other potential hazards are addressed immediately.
- Ensure that all food, banquet and otherwise, meet specifications and standards for all functions.
- Develop, implement and cost menus and buffets.
- Communicate with sales and convention services to ensure guest satisfaction.
- Meet with vendors to determine best pricing.
- Other duties as assigned by the Executive Chef.
Qualifications
- Culinary degree or equivalent experience.
- Ability to read and understand Banquet Event Orders.
- Generally 5+ years of experience in high volume banquet kitchen.
- Computer skills in Microsoft Word and Excel.
- Possess a strong sense of urgency.
- Ability to get work done in complete, accurate detail and in accordance with company standards.
- Ability to work at a faster than average pace.
- Ability to be thorough with follow up of delegated work.
- Positive leadership skills to train, teach and motivate a team.
